Courgette and Bean Sprout Stir-Fry


This is a great way to perk up a simple side into something special.  Goes great with a traditional roast!

Courgettes in a Basket


2 tablespoons
Rapeseed Oil
1 tablespoon
450 grams
Courgettes (Cubed)
175 grams
Bean Sprouts
Spring Onions (Cut into Matchsticks)
1 pinch
Caster Sugar
1 teaspoon
Sesame Seeds
1 tablespoon
Sesame Oil


  1. Heat a wok as hot as you dare, and add the Rapeseed Oil.
  2. Add a knob of butter and the courgettes.
  3. Cook for 2 minutes.
  4. Add the Bean Sprouts, Sesame Seeds and Spring Onions.
  5. Cook for 2 more minutes (or 1 if you prefer the sprouts on the crunchier side)
  6. Season with Salt, Pepper, Sugar.  Then drizzle with Sesame Oil (I only like a little, it has quite a strong flavour).
