Chilli & Cheddar Pancakes



Who says Chilli con Carne can't go in pancakes?  Not us!

Chilli con Carne


500 grams
Minced Beef
Red Onion (Sliced)
2 cloves
Garlic (Crushed)
1 can
Chopped Tomatoes
1 tablespoon
Tomato Puree
50 milliliters
Strong Beef Stock
2 tablespoons
Chilli Flakes
1 tablespoon
Vegetable Oil
500 grams
Cheddar (Grated)


  1. Heat the oil in a saucepan
  2. Add in the onion and cook until softened
  3. Add in the garlic and stir, cook for a further 2 minutes
  4. Add in the mince and brown
  5. Once the mince has almost completely browned, add in the tomato puree and chilli flakes
  6. Stir the mixture and cook for 2 minutes before adding the chopped tomatoes and stock
  7. Simmer on a low heat until the sauce has thickened
  8. Once the chilli is cooked, make your pancake of choice, top with the chilli and cheddar
  9. Place under the grill to melt the cheese if desired
