Courgette Ribbons & Feta Pancakes

Description

This deliciously fresh tasting savoury pancake filling does great with a dry white wine.

Courgette with Flower

Ingredients

4  
Courgette (Ribboned with a Vegetable Peeler)
2 cloves
Garlic (Crushed)
500 grams
Feta (Crumbled)
75 grams
Butter

Instructions

  1. Heat the butter in a pan and add the courgette
  2. Cook until gently softened and add the garlic
  3. Stir and continue to cook for 5 minutes
  4. Top the pancake with the courgettes and sprinkle with crumbled feta
