Currants, Lemon and Sugar Pancakes

It's the classic pancake filling that really comes to life with some extra flavours.

Lemon and Sugar Pancakes

Ingredients

200 grams
Currants
2  
Lemons (Rind and Juice)
3 tablespoons
Caster Sugar (Per Pancake)
2 tablespoons
Vanilla Extract
1 tablespoon
Brandy

Instructions

  1. Soak the currents and lemon rind in the lemon juice, vanilla extract and brandy for an hour.
  2. Top a pancake with the currents and sprinkle with sugar.
