Roast Garlic, Herb & Lemon Chicken

Ingredients

Chicken (Medium to Large Depending on Servings)
50 grams
Butter
1  
Lemon
2 tablespoons
Parsley (Finely Chopped)
2 tablespoons
Thyme (Finely Chopped)
2 tablespoons
Tarragon (Finely Chopped)
2 tablespoons
Chives (Finely Chopped)
1 clove
Garlic (Crushed)
1  
Lemon (Zest)
2 tablespoons
Sour Cream

Instructions

  1. Fire up the oven to 200 degrees Centigrade.
  2. Brush the chicken all over the melted button and salt.
  3. Squeeze that lemon all over the chicken.
  4. Now dust the entire chicken with the garlic and herb mix.
  5. Place in the oven beast-side facing upwards and then roast for an hour.
  6. Check if the bird is cooked by checking that the juices run clear.  When done…
  7. Carve and keep it chunky (none of those frilly thin slices, keep it juicy and chunky).
  8. Mix the sour cream into the juices, and then drizzle over the chunks and serve.
  9. So simple, but so delicious.
