Ultimate Runner Beans



As a child I always hated Runner Beans; until I had this at a restaurant, and now I cannot get enough of them!

Runner Beans in a Basket


700 grams
Runner Beans
25 grams
Green Peppercorns (in Brine, not dried.)
1 teaspoon
Coarse Sea Salt


  1. De-string the beans, and remove their hard tips.
  2. Slice with a good sharp knife into thin diagonal strips.
  3. Drop into already boiling water, and cook for 2-3 minutes.
  4. Drain really well - wet/wangy beans are a disaster.
  5. Chop up the green peppercorns.
  6. Melt butter a small pan, and add the peppercorns.
  7. When the butter starts to sizzle, throw in the beans and heat aggressively for 1 minute.
  8. Serve and sprinkle with the crunchiest sea salt you can find!
