Cheese sauce is a basic White Sauce with the addition of your favourite cheese for flavour.
- Melt the fat in a saucepan and stir in the flour.
- Cook for a a minute over a gentle heat. Do not burn the flour (it'll go brown and taste horrible if you do!)
- Gradually add the milk a little at a time. Beat well after each addition.
- Simmer for 2-3 minutes before adding the cheese.
- Stir until melted.
