Papas con Chorizo


A fresh and exciting take on classic tapas using sweet potatoes instead of regular potatoes.


Chorizo Sausage (Raw)
Sweet Potato (Large)
1 tablespoon
Olive Oil
1 tablespoon
Fennel Seeds
1 tablespoon
Chilli Flakes (Dried or in Oil)


  1. Preheat your oven to 180C or 350F.
  2. Slice the raw Chorizo sausages into chunky pieces (1.5-2cm in length)
  3. Peel the sweet potatoes.  Then cube into 2cm cubes, slide a couple of smaller pieces to extra crispy.
  4. Get a baking tray and spread out the potatoes.  Use a tray with sides (otherwise the juices will end up on bottom of your oven).
  5. Drizzle with Olive Oil.
  6. Sprinkle evenly with the fennel seeds and chilli oil.
  7. Muddle with your hands to get even coverage with the oil and spices.
  8. Pop in the oven for 20 minutes.
  9. Add the sausage pieces.
  10. Cook for a further 15 minutes, then serve.
